Chewy Chocolate Cookies

Here is a recipe for super easy and tasty chocolate cookies!!!

Chewy Chocolate Cookies

1 1/4 cup butter
2 cups sugar
2 eggs
2 tsp vanilla
2 cups flour
3/4 cup cocoa
1 tsp baking soda
1/2 tsp salt
Optional: 1 cup chopped nuts

Cream butter and sugar. Add eggs and vanilla. In separate bowl combine dry ingredients and add to the creamed mixture. (Add nuts at this point) Drop by teaspoon on ungreased baking sheet. Bake at 350 degrees for 8-9 minutes. DO NOT OVER BAKE. Cookies will puff during baking but will flatten when cooled and will be soft. Cool on pan for 1-2 minutes, then move to wire rack to cool completely. (4 1/2 doz.)

*I put parchment paper on my baking sheets!
**Mine stayed nice a puffy after cooling!!

Boy do those look GOOOOD! Very proud of you lil miss suzie homemaker over there baking all sorts of goodies. I'll bet your home smells delicious all the time, huh?

p.s. i love that mixer next to the plate of cookies. I saw one at a garage sale NIB and hubby wouldn't get it for me. He's right since we don't have the counter top space for it but I'm hoping one day I'll have my dream kitchen complete with a mixer like that. ;)

How much was the mixer? Regardless of counter space, if you had access to a good mixer (Kitchenaid?) for less than 100 bucks you should have snapped it up. I want one so bad. Travis will buy me a chaper brand, but I want the real thing. It's what Ina Garten and Sandra Lee use--it must be the best!

Those cookies do look delicious. I think I might be baking today.

Ladies... I couldn't live without my KitchenAide Stand mixer. It really does make a huge difference! And like 4andCounting said... if you can find one for under $100 it is definitely worth snapping up! Thankfully I got mine as a wedding gift!

OK... confession time... I can't make cookies! Mine always go flat as pancakes. I don't know what it is. Cakes... no problem. Cobblers, crisps, homemade pie crusts... easy peesy. Cookies... no way.

I will try it these if you say that they will not fail and if they do... you will have to come over and show me how!!!

They were trying to sell it for $100, I think. I remember later that weekend the garage sale was still going on and the price was marked down to $75. We didn't have the money at the time which is why we passed it up.

I don't remember what brand it was. But it was pretty enough to almost make me tear up when we walked away from it. twice. *sniff*
